Here are a few recipes to kick off our cooking up memories with Lectric Boil series, where we'll share tasty recipes that you can cook quick and easy on your Lectric Boil. We hope you enjoy the meals, and most importantly the time shared doing what you love with those you care about.
Haven't heard of Lectric Boil before? Let me fill you in - It's a rugged, portable, battery-powered induction stove and generator that can power your essentials. We built it for everyone- from those out knocking around trails in their ORV, or folks tailgating at the game, out boating - and everything in between. Lectric Boil allows you to cook anywhere no matter the wind or weather and is made in the USA.
You can plug Lectric Boil into any outlet for a quick charge, or with solar. It's quick and easy to cook healthy meals and boil water for your coffee anywhere you go, without draining your vehicle's battery.
Since there's no flame with its induction heat technology, it also makes for the obvious choice when cooking a hot meal where there's fire danger, or the weather isn't cooperating. You can cook safely inside your rig, tent, or off-grid cabin since it has zero emissions and the heating surface cools off faster than a traditional stove since it's induction heat technology.

Now for the first two recipes:
Keep in mind these time estimates are approximate, and will vary depending on weather, altitude, etc. It also depends what kind of cookware you're using:

🍛 Recipe 1: Coconut Curry Stir Fry with Rice (Serves 2)
Cook time: 18-20 minutes
Burner settings:
- Burner 1: Medium (for curry)
* Burner 2: Low-Medium (for rice)
Ingredients:
**Vegetables (pick 3–5):**
* 1 cup broccoli
* 1 red bell pepper, sliced
* 1 zucchini, chopped
* 1/2 onion, chopped
* 1 carrot, shredded or sliced
* 1 clove garlic, minced
* 1 tsp grated ginger (optional)
**Sauce & Base:**
* 1 tbsp olive or coconut oil
* 1 tbsp red curry paste
* 1 can (13 oz) coconut milk
* 1 tbsp soy sauce or tamari
* Juice of 1/2 lime
* Salt to taste
* 1 cup jasmine or basmati rice + 2 cups water
**Protein Options:
* *Meatless: Add 1/2 cup canned chickpeas or cubed tofu
* *With meat: Use 4 oz diced chicken, shrimp, thin-sliced beef, or pork
Cooking Instructions:
Burner 2 on Low-Medium: Cook the rice: Rice and water in a small pot. Bring to a low boil, cover, and simmer 12–15 min
Burner 1 on Medium: Start the stir-fry: Heat oil in a pan. Add garlic, ginger, and onion. Cook 1–2 min.
Add chopped veggies: Stir occasionally for 4–6 min
Add curry paste, coconut milk, soy sauce, and lime juice. Simmer 5 min. Salt to taste
If using protein: Tofu or chickpeas: Add with sauce and simmer. * *Raw meat or shrimp:* Brown separately first on **Medium-High**, then add to curry to finish cooking
Serve curry over rice.

🥘 Recipe 2: Lemon Garlic Veggie (Serves 2)
*Cook time: 15–20 minutes
*Burner settings:
- Burner 1: Medium-High or Boost (for protein)
* Burner 2: Medium (for noodles)
Ingredients
**Vegetables (pick 3):**
* 1 cup snap peas or green beans
* 1 cup mushrooms, sliced
* 1 bell pepper, sliced
* 1 zucchini, chopped
* 2 cloves garlic, minced
* Juice of 1 lemon
* 2 tbsp olive oil
* Salt, pepper, chili flakes (optional)
**Noodles:**
* 6–8 oz rice noodles, soba noodles, or spaghetti
* Water for boiling
**Protein Options:**
-Meatless: Add 1/2 block tofu or edamame
-With meat: Use \~4 oz sliced beef, chicken, pork, or shrimp
Instructions
- Burner 2 on Medium:Boil noodles: Cook noodles per package instructions. Drain and set aside.
- Burner 1: Prepare stir-fry Heat oil on Medium-High. If using raw meat or tofu: Cook first until desired. Set aside.
- In same pan, add garlic and veggies. Stir-fry 5–7 min.
- Add lemon juice, salt, and pepper. Stir in cooked protein (if using) and drained noodles. Toss everything together and heat 1–2 min.
